Instructions

  • Melt butter in a large pot over medium heat. Add onion and celery, cooking until soft for about 5-7 minutes. Stir in garlic and red pepper flakes, cooking for 30 seconds until fragrant.
  • Pour in chicken broth, add whole chicken breasts, sun-dried tomatoes, salt, black pepper, and oregano. Bring to a simmer.
  • Cover and let the soup simmer for 15-20 minutes until the chicken is cooked through. Remove chicken, shred with two forks, then return to the pot.
  • Reduce heat to low and stir in heavy cream, Parmesan, and fresh basil. Let it gently heat through without boiling.
